Confession No 21: I can’t live without salad
..... but it has to be good salad; great salad in fact. It can’t be an afterthought of manky old lettuce, tossed together with sad looking tomatoes and a bit of wilting cucumber. It has to be made with love – thought, understanding and a little devotion.
And before you ask “Devotion? Really Jay?”, think about some of the best salads you’ve ever had. They could have been complicated with lots of ingredients or the epitome of simplicity but all of them would have been made with thought, otherwise they wouldn’t have tasted amazing. In fact, one of the best salads I’ve ever had was in a little Italian restaurant. It was the first time I tasted rocket and it blew my mind. It was just rocket with a simple vinaigrette but it was perfect and I can still taste it 18 years later. Ah, I love a great salad....
My Dad calls salad ‘rabbit food’ as do most males I suspect. I wonder why women tend to love salad and men don’t? My husband would say “because it’s not meat”. And he’d be right. But salad doesn’t have to be boring or fluffy or even meatless. It doesn’t need to (and definitely shouldn’t) leave you feeling hungry and deprived. Great salads combine ingredients that work together to create something fantastic. Synergy they call it.
So in my crusade to convert as many people as possible to salad lovers, I’ve picked 5 completely different salads for you to try. They are all meals in themselves as opposed to side-dishes so have a look, give them a go and let me know what you think. But in the meantime....

Vietnamese Prawn Salad

Smoked Cod and Chickpea Salad
Smokey flakes of cod tossed through cumin infused chickpea salad. This is one of my favourite salads. The salty cod and earthy chickpeas will leave you wanting more, but not tonight cause you’re chockers.
Warm Pear Salad with Blue Cheese Dressing
Warm, sweet pears served with salty prosciutto on a peppery rocket salad with blue cheese dressing and toasted walnuts. This is my kind of indulgence.
Thai Beef Salad
Tender beef strips lightly stir-fried in chilli, ginger, garlic and fresh vegetables. Served on a trio of lettuce, rice noodles and bean shoots and drizzled with warm Thai dressing. Spicy, sweet, salty and fresh: just what you want in a salad.
Cajun Mango Chicken Salad
Warm spiced chicken tossed through fresh herbs and sweet mango, topped off with a hot, salty dressing. It's a holiday on a plate!
